Note to self

Last night, I was wanting something sweet. Searched the kitchen. Nothing worth eatin. I rummaged around the kitchen to see what ingredients we had. Let's see... flour, white sugar, brown sugar (not much), peanut butter, eggs... dang. Not much. I input what I had on allrecipes.com and the ingredients we didn't have (like vanilla extract, baking soda/powder). Sheesh. The recipes available where blah-ish.

Although I was super lazy, the desire to eat something sweet overcame my need to leave my butt glued to the living couch. I looked up a recipe for chocolate chip cookies and off I went to Safeway. I left four sticks of butter out before headin out in order to let 'em soften up. I was so happy when I returned home. This baking stuff was gonna be easy!

Wrong. Mutha fuh-ther. The butter wasn't soft enough for the hand mixer to cream. And with no other appliances, I had to mix that stuff myself. I kept switching between a fork and wooden spoon. 15 minutes of supposed prep time turned into an hour plus of excrutiating battling with cookie batter. I finally got everything mixed around midnight.

That was quite the event last night. I ended up making a friggin hundred cookies. And, no, that's not an exaggeration. There's really over one-hundred cookies. Now, they're not pretty. And they're not the greatest. But they're not bad considering I haven't made chocolate chip cookies since 8th grade home-ec class back in 1987. Dude. 22 years. But, note to self... I have to make sure to buy a food processor or a blender which can cream butter. No way I'm going through that crap again.
